The Executive Chef will take a "hands on approach" and is responsible for all food production including a la carte, banquets and other service venues (Pool restaurant and course Halfway House). The EC will supervise development of all menus, food purchase specifications and recipes. He/She will supervise the production staff and develop and monitor food and labor budgets for the department. He/She will maintain the highest professional food quality and sanitation standards in all kitchen areas. This position will report directly to Plainfield Country Club's Club House Manager, Jon Anthony LaRocca.
Key areas of responsibility include:
Ensure that all food is consistently outstanding - from standard club fare offerings to incorporation of cutting-edge culinary trends.
Significantly elevate utilization of PCC's renovated Clubhouse and kitchen facilities.
Recruit, train, motivate, mentor, manage and schedule all Kitchen staff.
Lead by example in the delivery of high quality and consistent products.
Create, monitor and manage budgets for food revenues, payroll, food costs, and all other expenses with approval of CH Mgr, CFO, COO and Finance Committee.
Oversee a highly professional and enjoyable work environment that upholds all PCC policies.
Provide the highest professional standards for sanitation and maintenance of all kitchen areas and equipment.
Work closely with the "FOH staff" to ensure collaboration, quality, and innovative service for Members & Guests.
Work closely with other departments to establish best practices and ensure that events and projects are executed smoothly and staffed appropriately.
Partner with the Clubhouse Manager and team for pre-shift meetings, menu design, daily specials, event menus and management of all costs.
Regularly assess ticket time standards and food survey results.
Maintain frequent contact and interaction with PCC Members and guests.
Maintain close working relationship with the COO/DG, CH Mgr, Banquets & Events Mgr, CFO,
Superintendent, Head Golf Professional, Facilities Mgr, Director of Racquets and all other Managers.
Support Banquets & Events Manager's efforts to execute weddings, parties and events.
Approve requisitions of products and other necessary food supplies.
Establish controls to minimize food and supply waste and theft.
Provide training and professional development opportunities for all kitchen staff.
Plan and manage the employee meal program.
Approve all appropriate weekly time cards, payroll, purchase orders, and invoices.
Assist with communications process to include website, email, instagram, signage, etc.
Attend all staff, house committee and other applicable meetings.
Experience / Qualifications / Skills: Including, but not limited to, the following:
A Culinary Arts Degree from an accredited school or a diploma from an accredited apprentice program.
Extensive experience in kitchen operations. Experience as an Executive Chef at a Club or Luxury Hotel is preferred.
Strong management, leadership, and communication skills.
A "team player" that is focused on PCC's goals and objectives.
Ability to create menus that appeal to a variety of diners.
Solid computer skills including Outlook, Word, Excel, POS systems, etc.
Ability to effectively manage food/labor costs and proactively make adjustments based on activity levels.
Provide a highly respectable workplace and culture for the entire hospitality team.
Excellent interpersonal skills.
Strong leadership skills with proven experience in recruiting, managing and motivating a dynamic team.
Able to communicate effectively and professionally in both verbal and written formats.
Must demonstrate appropriate analytical skills, attention to detail and creativity.
Must work a flexible schedule to include nights, weekends and holidays.
Ability to stand for extended periods of time and occasionally lift up to 50 lbs.

The club will provide a compensation and benefits package commensurate with experience and
qualifications. This includes but not limited to:
