General Responsibilities Include:
- Tactically works with Sales, Engineering, Housekeeping, Front Office, Accounting and Food & Beverage to maximize guest satisfaction.
- Market ideas to promote business; reduce employee turnover, maintain revenue and payroll budgets, and meet budgeted productivity while keeping quality consistently high.
- Ensuring profitability of the of the Food and Beverage and Rooms departments, maximizing revenue and controlling costs.
- Reviews and approves hotel operations and food and beverage department budgets, defining and directing changes, as required.
- Maintain and improve food and beverage service, quality and consistency standards with the objective of consistently exceeding guest expectations.
- Work with Restaurant Managers in overseeing staff training and development, coach, counsel when there is a need within Human Resources.
- To constantly monitor guest survey feedback relative to guest satisfaction with food and beverage offerings in order to maintain the highest level of guest satisfaction, review results with colleagues to develop appropriate corrective action and ensure implementation.
- Work with the Executive Chef and Restaurant Managers, review menus and beverage lists and food and beverage concepts to maximize revenue.
- Promote facilities and services, resolve problems and maintain communications with all departments to ensure consistency in the service provided.
- Identify and develop talents within the department for future potential growth
- Hires, supervises, coaches, disciplines and conducts performance evaluations for department heads and key personnel.
- Work closely with General Manager on maintaining strong relationship with vendors, hospitality competitors and city officials.
- Must be an example of the Viceroy Ideology, Values, Brand Standards, and a champion of appearance and hygiene guidelines.
- Perform other job duties and projects as directed.
Skills/Knowledge Required:
- Be able to effectively present information to customers, clients and other colleagues.

- Must have knowledge of Food and Beverage operations, service standards and health and safety standards.
- Must have knowledge of Rooms operations and service standards.

Physical Requirements:
- Must be able to walk and stand for up to four (4) or more hours in length. Position requires walking and giving direction most of the working day. Length of time for these tasks may vary day to day and task to task.
- Must be able to bend, stoop, squat and stretch
- Must be able to occasionally lift items up to 15lbs on a regular and continuous basis.
- Requires grasping, standing, sitting, walking, repetitive motions, listening and hearing ability and visual acuity.
- Talking and listening occur continuously in the process if communicating with guests, supervisors and colleagues.
Qualification Standards:
- Minimum five (5) years prior experience in a luxury hotel environment overseeing multiple departments including food & beverage Experience in a luxury hotel/resort background required
- Experience in a pre-opening environment strongly preferred
- Excellent knowledge of computer accounting programs, math skills, as well as budgetary analysis capabilities required.
