What Will I Be Doing?
As Chef de Cuisine, you will be responsible to direct, supervise and provide leadership for WaterSound Beach Club Culinary program, in conjunction with the Executive Chef, efforts to achieve the highest levels of member and guest satisfaction, quality service and compliance with St Joe Club & Resort policies and procedures while meeting/exceeding financial goals.Position is responsible for the short term planning and day-to-day operations for WaterSound Beach Club restaurants, 30*86* and Costa Chica. To act as the Executive Chef in his absence. The major areas of responsibility/ management include: Stewarding Services; Direct food preparation, production and control for all food operations. Recommends implements and monitors the Departments' budgets and manages expenses within approved budget constraints.
What Experience is Needed to Be Successful?
To be considered for this position, a degree in culinary arts is needed with three to five years culinary leadership experience in a high volume restaurant setting.You must have computer skills and experience in Microsoft Office applications, in particular, Word, Excel and Outlook. If you have experience in menu creation and new dish development, it would be helpful.
What are the Physical Requirements of the Job?
This is a working Chef position, so you will spend much of your day and shift assisting in the line operations. This may mean you are on your feet for 10-12 hours a day during peak season. You may have to bend, kneel, stoop, crouch, climb stairs. Your working conditions are mostly indoors; however the kitchen is a hot place to work. You must be able to lift/carry at least 25 lbs. regularly and 50-100 lbs on occasion. There will be occasional keyboarding, emails, and sitting.
