Job DescriptionThe Food and Nutrition Services Manager is responsible for providing innovative, exciting and culturally diverse hospitality and culinary experiences for residents, families, staff and guests. They are also responsible for planning, organizing, developing and directing the operation of the home's food services department according to current federal, state and local regulations and standards, and Maine Veterans' Homes policies/procedures to ensure that quality nutritional services are provided on a daily basis and that the Nutrition Services Department is maintained in a clean, safe and sanitary manner. Directly supervises the nutrition services staff. As a member of the Maine Veterans' Homes team, this manager hires, leads and inspires an engaged team, cooking and serving thoughtfully designed seasonal menus and cuisine across multiple dining venues, delivered with excellent service while maintaining cleanliness and safety. Some additional responsibilities include:Responsibly manage and supervise all department staff including scheduling, assignment, direction, performance review, training, hiring and corrective action consistent with company policy.Meet regularly with residents and family members to confirm that high satisfaction levels are maintained.Assist Kitchen staff with back and front of the house operations as needed. This includes the ability to work all stations in the kitchens and/or dining rooms if needed.Delegate tasks to all staff so that the kitchen and dining areas are maintained at the highest levels of cleanliness and quality at all times.Ensure that all food is prepared, stored and served according to Company standards and with state and/or local health code requirements.Conduct and participate in monthly department meetings.Review and maintain monthly and annual budgets. Assist in preparing annual budget.Work with staff and residents to plan and develop recipes and menus based on residents' likes and dislikes and monthly budgets.Ensure all staff use and maintain equipment properly to avoid injury or damage.Maintain appropriate inventory of kitchen supplies.Ensure purchasing standards are maintained and appropriate vendors are used at all times.This is an exempt position that works primarily days but does require some early morning, evening, weekend and holiday work.Experience and SkillsMust be a qualified dietitian, graduate of a dietetic technician program approved by the American Dietetic Association, or graduate of the Dietary Managers Association and has passed the Certifying Board for Dietary Managers credentialing exam; or is a graduate of a State-approved course in Food Services Supervision; or has training and experience in food service supervision and management in a military service equivalent to the requirements above. Five (5) or more years Culinary Experience in the hospitality industry preferred.
