ABOUT THE YMCA OF THE ROCKIES:The YMCA of the Rockies operates two year-round family resorts and conference centers on each side of Rocky Mountain National Park: Estes Park Center located in Estes Park, CO; Snow Mountain Ranch located in Winter Park, CO; and Camp Chief Ouray, a summer resident camp for kids located on the Snow Mountain Ranch property.Snow Mountain Ranch (SMR) is located on the western side of the Rocky Mountain National Park, in a more remote area of Colorado known as the Fraser Valley, near Granby and Winter Park. In the winter, SMR is home to one of the largest Nordic ski areas in the country, with over 100 km of trails on the 5000-acre property. Winters at SMR can last up to eight months, but for winter enthusiasts, there is no place like it, with days and days of powder. Join us!Position Summary:Responsible for the AM or PMshift management of all kitchen & back of the house food service operations at Snow Mountain Ranch; including food preparation, kitchen cleanliness, as well as overseeing catering events/banquets, and guest satisfaction. TheCook III is also responsible for compliance with federal, state and county health regulations.Essential Functions / Requirements:Culinary degree preferred, plus two years cook experience.Minimum of five years experience in volume food preparation, institutional food service, buffet presentation and carryout/grab and go service.ServSafe Certification.Strong leadership qualities and minimum of two years supervisory experience.Proven record of sound managerial and organizational skills to plan and serve up to 1,000 meals per day during peak seasons.Effectively coordinate with the Executive Chef and Assn Food Service Director to ensure high levels of customer satisfaction and seamless cooperation between front of house and back of house operations.Train, develop, supervise and evaluate employees to ensure maximum productivity is attained and morale is at a high level. Monitor scheduling, time keeping and training for Food Service personnel.Order food, supplies and equipment necessary for the food service operation in coordination with the Association Food Service Director.Plan delicious and nutritious meals and deliveries to ensure the best utilization of the facilities and staff to meet customer needs.Responsible for compliance with all Federal, State and Local Health Codes and overall quality assurance in the kitchens.Direct all aspects of food production, storage, preparation, portion control, inventory and record keeping while ensuring culinary excellence at all times.Uphold the YMCA of the Rockies Mission, policies and programs.Support the Association safety program. Responsibilities include, but are not limited to: * Complete assigned opening and closing side work duties. * Obtain service area assignment at the beginning of each shift. * May act as food runner by carrying out and delivering food and maintaining service window. * Keep the buffet stocked and clean. * Have explicit knowledge of all menu items and their preparation. * Clear plates, glassware, and flatware from tables after guests have finished dining. * Take dirty tableware to dish room and unload, sort and stack silverware, dishes, glassware, etc. in designated areas in the dish area. * Between seatings promptly clean table tops and chairs. Check floor and clean as required. * Quickly, efficiently and accurately reset and arrange tabletop. * Respond appropriately to guest requests and accommodate their needs. Communicate guest requests to server as needed. * Communicate with server and hostess to assure efficient seating, table utilization and customer service. * Be available to fill in as needed to ensure the smooth and efficient operation of the restaurant as directed by the restaurant manager or immediate supervisor. * Ensures the presentation of every plate going into the dining room with the whole order to the correct table. * Must be knowledgeable of proper table set up, menu and course descriptions and the restaurant organization. Qualifications: * Must have a friendly and courteous attitude towards guests - required. * Must be able to lift and carry 40+ lbs - required. * Must be able to stand for 8+ hours - required. * Must be able to work weekends and holidays - required. * Must be fluent in English - required. * High school diploma or equivalent - preferred. * Prior guest service experience - required. * Previous restaurant experience, specifically 1 year minimum sit-down dining server - preferred. * Must be available to work holidays including: Thanksgiving, Christmas Day, December 26th through January 2nd, Presidents' Day Weekend, and any other holidays as requested -required.
