We are looking for a dynamic Executive Sous Chef whose passion is the creation of great food and service. The schedule includes Saturday and Sunday with the shift hours from 11:00am to 7:00pm, some holidays will be required. The expected days off will be Wednesday and Thursday. Positions Details Responsible to assist Chef in supervising an institutional kitchen that provides three meals per day to residents and guests, plus catering special occasions. Oversees food quality, service, staff, facilities, adherence to regulations, policies, and procedures, and monitoring expenses. Helps ensure that the kitchen prepares and cooks the planned meals for residents. Here are some of the position responsibilities: Trains all new staff. Conducts in-service with kitchen staff. Directs and monitors support employees as necessary. Understands the special dietary restrictions of senior adults. Assures that meals are served as prescribed. Assists staff to prepare foods according to menus, recipes, dietary guidelines, and production guidelines. Assures that standards of food quality, sanitation, and preparation safety are maintained. Assists Chef to enforce policies, procedures and standards. Keeps records as required. Meets with Director and Chef weekly to review and plan menus for the cycle and caterings. Helps ensure that all stored foods are labeled, dated, and stored properly. Works with Prep Cook to assure safe handling and storage of foods and leftovers; and that they are stored properly and at the correct temperature. Works with Diet Aides to assure that special diet items are prepared as required. Checks for notes, telephone messages, order changes, and other communications. Checks in and signs for deliveries if necessary. Answers telephone as necessary. Assists in food preparation being responsible for majority of baking and pastry items. Ensures that meals are presented and garnished in an appropriate and appealing manner - at buffet line and kitchen serving line. Keeps work areas, equipment, and tools clean and sanitary. Helps monitor the kitchen operation for hazards, such as wet floors, chemicals, and other sources of injury. Oversees preparation of foods for catering / tray service with Chef and oversees preparation of foods for special events with Chef. Makes recommendations for improvements in service, quality, efficiency, and safety. Immediately reports, in writing, any accidents, incidents, and items that need repair. Attends committees, meetings, and trainings as required. Assists in the development of systems, policies, and procedures. Helps oversee quality control of kitchen service. Stays up to date on information and trends in the industry. Performs other duties as assigned. Supervisory Requirements: Can be responsible for supervising more than two and seldom over 10 people at the time. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Immediate supervision over a department where the majority of time is spent assigning, reviewing, checking work, eliminating ordinary difficulties; where procedures are standardized; but where accountability for results rests with the next higher level of supervision. Responsibilities include training employees; planning, assigning, and directing work; addressing complaints and resolving problems. Position requirements: Must have a degree/certificate in Culinary Arts or a minimum of 3 years in a similar position within the hospitality and senior living industry. Must be able to read, write, and speak English, and the ability to communicate clearly with residents and staff. Must work cooperatively with other management and staff, and be patient, pleasant, and understanding in relating to residents. Proficiency in Microsoft Office and Email is also required.
