Directly responsible for knowledge of the food program, menu development, and all kitchen functions including food purchasing, preparation and maintenance of quality standards; sanitation and cleanliness; directing kitchen staff; training of employees in methods of cooking, preparation, plate presentation, portion, and cost control.
Ensure that all food and products are consistently prepared and served according to the Executive Chef and the brewpub’s recipes, portioning, cooking and serving standards.
Fill in where needed to ensure guest service standards and efficient operations.
Work with Executive Chef to plan and price menu items. Establish portion sizes and prepare standard recipe cards for all new menu items.
Ensure that all products are ordered according to predetermined product specifications and received in correct unit count and condition and deliveries are performed in accordance with the brewpub’s receiving policies and procedures.
Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures.
Qualificaitons:

Must be flexible, pay attention to detail, and have a sense of teamwork. Must possess, or be willing to obtain, current food manager certification and certification of Hepatitis A vaccinations where required. Must have a positive Criminal Background Screening. Must pass a physical having no signs or symptoms of a communicable disease including tuberculosis where required. Freedom from tuberculosis must be documented on an annual basis where required.
