The Summit has two communities, on one campus, providing a continuum of care for residents. At The Summit Independent Living and The Summit Assisted Living, we care for our residents and provide them with access to additional services provided by The Summit Health & Rehab Center through a partnership agreement with Hill Valley Healthcare (the operators of The Summit Health & Rehab). We provide care coordination for our residents and team members as both communities work together to provide consistent, quality care through the full continuum of care for all Summit residents. The Executive Chef is responsible for the daily preparation and presentation of all food in the community within a department budget of $4.5 million. The Chef's team consists of 40 Team Members working in the main kitchen, café and three satellite kitchens. Collectively they produce culinary experiences for five dining rooms and meeting/banquet rooms. The Chef is to ensure proper use and maintenance of equipment as well as the safety and sanitation of all production areas and food storage locations. Oversees and leads the culinary team to include kitchen management, cooks, prep cooks, café cooks and utility workers. Is a resource to other team members in all aspects of food service management. Duties and Responsibilities Assists in planning and implementation of ever changing, menus with seasonal features. Oversees daily preparation and presentation of all meals, catering, and special events. Ensures kitchen and dining management and staff practice safe and sanitary use of equipment, small wares, and food handling. Implements systems and training to inspect quality, quantity, temperatures, and appearance of food before it is served. Tracks and manages annual and monthly food and supply costs to ensure budgetary needs are being met. Directs Kitchen Manager and Storeroom Coordinator for ordering of all food and supplies. Qualifications Proven experience leading a culinary team, 5+ years' experience as a chef, preferably in a retirement community, club or other hospitality environment. Strong management, communication, and interpersonal skills. Enjoys interacting with customers. Ability to organize workloads and meet time deadlines.
