Summary of Position: Support the GM in the planning, organizing, training and leadership necessary to achieve kitchen objectives in food production, costs, employee hiring & retention, food quality, cleanliness and sanitation. General Duties & Responsibilities: Achieve company objectives in sales, food quality, food presentation, kitchen safety, sanitation and cleanliness through training of employees and creating a positive, productive working environment. Ensure that all food and products are consistently prepared and served according to the restaurant's recipes, portioning, cooking, presentation and serving standards. Fully understand and comply with all federal, state, county and municipal regulations that pertain to health, safety and labor requirements of the restaurant, employees and guests. Provide timely and constructive feedback and coaching to employees regarding their performance. Ensure both positive and negative performance is documented and communicated accordingly. Schedule cooks and utility workers as required by anticipated business activity while ensuring that all positions are staffed when and as needed and labor cost objectives are met. Partner with the GM in making employment and termination decisions for kitchen staff. Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner. Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurant's preventative maintenance programs. Ensure that all products are received in correct unit count and condition and deliveries are performed in accordance with the PJWRG receiving policies and procedures. Key Abilities & Behaviors: Ability to lead and make decisions using general, restaurant management guidelines Possesses the ability to analyze P & L statements and work within a budget Is friendly, approachable and able to communicate effectively to employees, management and customers Has a "can-do" attitude and the willingness to learn and execute quickly Manages multiple priorities, tasks and takes initiative Skills & Experience: Has knowledge and experience in managing a kitchen, with a minimum of five years of kitchen operations and restaurant experience.
