Our Exciting Work Environment Beginning in 2016, Delaware North became the official food and beverage partner of TIAA Bank Field, home of the NFL's Jacksonville Jaguars. With world-class amenities and capabilities to expand seating to over 82,000 fans, TIAA Bank Field has played host to iconic events, from Super Bowl XXXIX to the annual University of Florida and University of Georgia football game. The centerpiece of TIAA Bank Field is the US Assure Club, which underwent a $26.6 million renovation prior to the 2016 NFL season. In the reimagined club space, an open-floor concept gives optimal views of the field and an extra 220 televisions ensure fans don't miss any of the action. Delaware North operates 122 food outlets in the club, which also features a unique deck and cabana-style seating at the 50-yard line. Responsibilities Assists Executive Chef with daily supervision and production of kitchen operations of multiple clubs and the catering department, including game and non-game events. Fully responsible for food production, scheduling, food and labor costs and sanitation Menu Development for the different clubs as well as ordering and inventory for the department. Plan menus, maintaining financial responsibility for the menu mix Oversee inventory of food product and coordinates product ordering and receiving within corporate specifications Maintain a clean and orderly kitchen to Comply with State and local Heath Department Regulations Qualifications Three years Culinary Arts experience, including previous experience in a management role. More specifically, experience as a in a high volume operation. Familiar with monitoring of food and labor cost, menu development and costing. Familiar with ordering and inventory procedures Knowledge of basic accounting procedures Excellent Organization skills and Multitasking Ability to coach, develop and train others Ability to follow and write bulk recipes for production and service Knowledge of restaurant operations, including fine dining, and banquet catering. ServSafe Certification preferred. ACF certification preferred. Must obtain certification within 2 years of employment. Candidate must complete a cooking practical.
