Bradford County Manor - Main FunctionTo be an active member of the Dining and Nutrition Services team. To provide the best Dining and Nutrition Services service for residents, guests and staff. Understands that resident needs are paramount and that changes in diets, etc., can be instant and is flexible to these needs.Duties and ResponsibilitiesListed in descending order from most frequently performed to least frequently performed:Performs all duties assigned such as careful and sanitary handling of food, dishes and equipment.Maintains neat and clean work area.Utilizes proper body mechanics to prevent injuries.Takes initiative in completing work that needs to be done within area of responsibility.Performs food preparation tasks according to position assigned by the Cook/Supervisor.Assembles food items for assigned station on the resident tray line and fine dining to food production sheets.Prepares beverages, nutritional supplements, and nourishments for resident service, tray line, fine dining and between meal snacks. Follows snack tallies.Scrapes and washes all dishware from resident, guest trays, and fine dining according to department sanitation procedures.Scrubs and sanitizes all pots and pans following department sanitation procedures and organizes in designated areas.Assists in tray services, portions and assembles food. Puts proper food onto the resident meal trays following the menu.Serves food as necessary in fine dining.Portions desserts, salads and juices for residents, following standardized portion sizes according to menu.Transports food carts to and from designated areas on residents floors in a safe and timely manner.Fills out, properly and accurately, nourishment paperwork following department guidelines.Delivers nutritional supplements and nourishments to resident areas and locates in proper holding locations - cupboards or refrigeration.Obtains stock from refrigerators and storerooms as directed following first-in, first-out guidelines. Maintains sanitation requirements in these areas.Performs daily, weekly, and monthly cleaning duties as assigned by the Cook/Supervisor. The areas cleaned include Dining and Nutrition Services department, kitchen, dish room, salad/dessert area, cooks area, pot and pan area, bake shop, janitors closet, food service office, locker room, walk-in cooler, walk-in freezer, Dining and Nutrition Services storeroom, employee break rooms, etc.Collects all garbage in Dining and Nutrition Services areas and transports outside to the garbage containers.Prepares assembly line stations for resident tray line services in a timely manner, meeting tray line starting times.Dates and stores leftover food as required by department procedures.Performs Cooks Helper duties as assigned.Attends Inservices and meetings pertaining to the Dining and Nutrition Services Department. Unattended Inservices must be made up within thirty (30) days.Answer telephone promptly and identifies department and self.Opens cans, cartons, and so forth for the cooks.Prepares vegetables and fruits for cooking or serving.Documents nourishments not administered.Minimal usage of personal computer and printer.In the absence of the storeroom clerk - examines merchandise received, checks for damages and shortages, and verifies that all Dining and Nutrition Services Department criteria is met by signing name. Notifies Cook/Supervisor or Food Service Manager of damages or shortages. Stocks merchandise as directed.Other duties as assigned.EducationHigh school diploma or equivalent preferred or 16 years of age or older still enrolled in High School. Must be able to read, write, and speak English and be able to understand written and oral communications.ExperienceSome kitchen experience is desirable. On-the-job training is provided.Technical Skills or AbilitiesMust be able to use dish machine, slicer, food grinders, toasters, refrigeration, coffee urns, juice dispensers, tray line belt, steam table, blenders, ovens, ranges, microwaves, deep fryers, sinks, mop ringers, etc.Physical and Environmental FactorsPhysical demands require the following:Long periods of standing and walking.Frequent reaching, twisting, bending and stooping.Occasional to intermittent lifting not in excess of sixty (60) pounds.Occasional to intermittent pushing and pulling of carts.Sufficient manual dexterity to use a variety of utensils and equipment.Must be able to work quickly to meet frequent time deadlines.Work area is a normal institutional kitchen environment.
