Job Summary The ideal prep cook must be a certified cook with knowledge of food preparation, food temperatures, and set-up/breakdown of station along with a great "positive can-do attitude". Must have ServSafe certification. A flexible schedule is required, including weekends, holidays, and evenings. This is a full-time position only. Duties and Responsibilities Must be fully competent on all stations in the kitchen. Must be able to execute all menu items, for all meal periods in the assigned kitchen. Has a complete understanding of work safety and emergency procedures. Fully understand the importance of and have the ability to utilize standard recipe cards. Must be able to produce all food items used in your assigned kitchen Ability to produce and train on all recipes utilized in your assigned kitchen in the Hotel. Fully understand the purpose of and have the ability to produce all Mother Sauces, all stocks and have the ability to utilize them to make any other needed sauce. Competent in fabricating all meat, fish and poultry. Understand the differences and uses of all herbs and types of seasonings. Basic Knowledge of Pastries. I.e.: the ability to produce pastry cream, pate choux and be able to decorate a cake. Basic Garde Manger Skills such as centerpieces, canapé production, display cold food, amenities, and pate's, dressings and cold sauces.
