Job Description

DESCRIPTION:The Sous Chef of Duck & Roll will be the kitchen lead and key collaborator with the owner (Executive Chef) to establish a new Authentic Cantonese restaurant at 4800 Main St, Kansas City, MO. You will undertake menu development with the owner (Executive Chef) and once opened, you will have day-to-day responsibility for staff management, inventory control, quality control and general kitchen management. MUST HAVE experience working in an Asian restaurant with wok cooking experience and PREFERABLE experience in making dumplingsESSENTIAL DUTIES AND RESPONSIBILITIES:Ensure all food preparation meets health, safety and quality standardsPrepare and present delicious food consistent with recipe and plating standardsSupervise staff and lead by example:Ensure a clean and tidy kitchen environment with appropriate food storage and inventory managementDaily food service preparationControl costs by ensuring portion control, waste minimizationResponsible for ensuring environment with strong teamwork and communicationManage equipment cleaning and maintenance scheduleAssist other departments wherever necessary and maintain good working relationshipsTraining of all staff in compliance of company proceduresComply with fire regulations and all health and safety and food safety legislationBe environmentally awareQualifications and Skills:Minimum 1 year experience in an Asian Restaurant and wok cooking, preferable to have experience making dumplingsMinimum 2 years experience as a Sous Chef or senior chef role with supervisory experienceA current, valid, and relevant trade commercial cookery qualification (proof may be required)Strong coaching and motivating skillsExcellent communication skillsFood Handlers Permit, Food Manager CertificationAbility to work under pressureProof of eligibility to work in the USAbility to read and follow a recipeAbility to understand both written and spoken EnglishBe able to work in a standing position for long periods of time (minimum of 8 hours a day)Be able to reach, bend and frequently lift up to 50 pounds
