DescriptionThis position will oversee and manage all kitchen responsibilities as outlined below as part of a team. A Minimum 2 years of experience managing a kitchen as a kitchen manager or chef, preferably a high volume establishmentCulinary degree preferred but not mandatoryRequirementsResponsibilities Include but not limited to the following:Maintain a high standard of daily food prep and productionPlace orders with multiple distributorsProduction of seasonal and local dishesResponsible for daily and monthly inventoriesResponsible for cleanliness of restaurant, including all coolers, freezers, storage rooms, and facilities as well as equipmentMaintain proper procedures and ensure all staff follow food handling laws as mandated by the federal and local health departmentsLead by ExampleMust be a Team PlayerMust have a current/valid Illinois Food Manager certification and willing to obtain allergy training certificationMust be able to perform the following tasks:Understanding of HACCP in a scratch kitchen, including opening kitchen, setting kitchen up for lunch and dinner serviceAccurately filling out prep sheetsWork and prep simultaneouslyDelegate duties to subordinatesWork every station in the kitchen including dish, food runner, and busserRead as well as write recipesCalculate a plate costResponsible for maintaining food costs, low waste, and laborExperience utilizing restaurant POS system for costing, inventory and recipe maintenance preferred.
