Impeccable staff.Sous Chef and Prep Cook Candidates must have: - Previous restaurant experience - Exceptional attention to detail- Able to work holidays, weekends and evenings- Up-beat positive attitude committed to service excellenceSous Chef Expectations: Work weeks are 5-6day(s) per week. Days off may be split depending on circumstances or preference. Work days are 8-9 hours per day minimum. Food Quality and Consistency Must be able to run kitchen and keep tickets times within standard parameters Must be able skilled at plating, visual presentation and composition Recipe Repertoire and Menu Contribution Sous are encouraged and required to develop recipes for menu placement* Sous must participate in development and execution for daily specials Sous are encouraged to bring new technique and experience Industry Trend Awareness Upon employment sous will be asked to study new market trends and opportunities for recipe and technique development Applicants must understand food kitchen equipment safety and routine maintenance. Must ensure proper tool handling and safety in the kitchen. Sous will understand all safety standards and be able to effectively and concisely respond when procedures are compromised. Sous will be required to cost and set pricing for new menu items of their own creation. Sous must always display a positive and supportive outlook toward the job, their peers, and their staff. Sous must provide leadership in moments of problem solving and not be afraid to make the call. Sous will be encouraged to utilize company resources to work through problem resolution.
