The Sous Chef of the Stephanie Inn Dining Room will play an important role on the Martin North management team, demonstrating the highest standard of culinary excellence and team leadership to her or his colleagues and staff, and demonstrating each day a professionalism and enthusiasm that sets an example for the entire restaurant.
As the Stephanie Inn is renowned for its multitude of immersive guest experiences, from daily culinary guest sessions to winemaker dinners and events, the Sous Chef plays a critical role in bringing culinary innovation and ideas to the Inn's offerings. The ideal candidate is equally passionate and knowledgeable about Oregon wine, spirits and other artisan products and makers, and keeps up on trends in dining experiences. He or she will play a pivotal role in executing the Inn's culinary-related guest offerings beyond the dining room.

JOB SUMMARY:Plans and prepares food for dinner, special functions, and any other requests, including but not limited to room service during the afternoon and evening. Responsible for consistent food quality. Supervises cooks, prep cooks, and dishwashers. Assists in overseeing all operations of the kitchen including ordering and training. Effectively and constantly communicates on an ongoing basis with management.
Maintains daily menu specifications.Prepares food by maintaining correct cooking methods.Makes sure presentation of food is at acceptable standards.Monitors the speed and quality of food preparation.Responsible for cleanliness of kitchen. Assigns cleaning duties to cooks and dishwashers. Helps Executive Chef with organizing storerooms and refrigeration to maintain proper inventory. Assist in preparation of monthly inventory and purchases.Keeps coolers and freezer neat and orderly, making sure all food is properly rotated, dated and labeled. Helps Executive Chef with meal planning. Reads and understands daily food sales, labor and food costs posted by Executive Chef. Communicates with Dining Room Supervisor at the beginning and end of each shift and answers the phone as needed.Assists service staff with room service and serves tables as needed.Immediately addresses all problems, both real and perceived, whether guest or fellow employees. Maintains the security of the kitchen, dining room, storage areas, and work areas. Works closely with Executive Chef, accepting delegated tasks and communicating needs.Ensures that all menus are printed and posted at appropriate times and places. Responsible for communicating to general manager changes and/or problems within the kitchen in the absence of Executive Chef. Works with restaurant and hotel staff to make the Stephanie Inn a memorable experience for guests.Presents to guests during Uniquely Stephanie Experiences utilizing their knowledge of food and beverage.Willingness to work regularly scheduled hours, as well as additional hours when asked and have flexibility regarding scheduling. Maintains a positive attitude and promotes the same with kitchen and dining room staff. Maintains a high level of personal hygiene. Continually looks for ways to improve operations. Accepts the responsibility as ambassador of the Stephanie Inn to hotel guests. Attends all meetings, both property-wide and department-specific. Physical demands: Constant standing and walking, frequent twisting, bending, stooping, grabbing, talking, reaching with hands, arm & fingers, work in moderate noise levels, lifting 5 to 40 pounds over your head. Performs other duties as requested by Martin North management team members. Duties current to 8/13/19 and subject to change.
