Prep Cook Summary

Plan prep, set up and provide quality service in all areas of cold food production to include, but not limited to cold menu items, cold line specials, and displays/presentations. Must have a complete understanding of all basic food preparation skill sets with the ability to perform these tasks error-free and meet the company quality standards.

Essential Job Functions

Service Provision:

  • Follows company standard recipe and menu specifications.
  • Uses a knife and performs all basic knife cuts.
  • Maintains accurate food holding temperatures at all times.
  • Performs basic food preparation items i.e., stocks, soups, and vegetable production.
  • Accurately measures recipe quantities.
  • Communicates verbally and in writing to all co-workers.
  • Maintains complete knowledge of correct maintenance and use of equipment including slicers, food processors, refrigeration, stoves and other applicable equipment or tools.
  • Follows daily production schedules and completes all assignments.

Risk Management:

  • Understands and abide by all company policies and procedures
  • Adheres to all health department, sanitation, and safety practices.
  • Understands and abides by all emergency procedures.
  • Understands the proper storage of all food, supplies, and chemical safety.
  • Reports all concerns for equipment repairs or hazardous issues immediately to supervisor.
  • Has current CPR certification.


Customer Service:

  • Maintains department standards at all times.
  • Maintains a professional and positive attitude with other departments and their staffs.
  • Understands resident preferences and needs and makes it a priority always.
  • Assists service staff by providing special requests as required.

Knowledge, Skills, and Abilities

  • Communicates with 1) persons who are aging or who might have dementia, 2) resident's family members, 3) co-workers, and 4) supervisors in a courteous and professional manner.
  • Maintains company standard related to attendance.
  • Maintains company standard related to punctuality.
  • Maintains company standard related to dress code.

Education and Experience

  • Minimum of one (1) year kitchen experience.
  • High school graduate or GED equivalent.
  • Food Handler Certificate or ServSafe certificate.
