GENERAL SUMMARY OF DUTIES: Responsible for any and all actions on his/her shift. Must keep a good working rapport with Room Chef and employees on previous shift. Must help out at busy change overs as needed. Employee is in charge in the absence of the Room Chef. Applicant must demonstrate a superior knowledge and the ability to instruct others in the essential functions that are listed below. EXAMPLE OF DUTIES/ESSENTIAL FUNCTIONS: (Includes, but is not limited to the following.) 1. Inspect all shift employees as to adherence to dress code, sanitation and work habits. 2. Check all storage areas daily communicating any problems in food storage, receiving, handling and temperature control. 3. Upholds sanitation guidelines as set by Washoe County Health Dept 4. Upholds standards of Room Chef 5. Ability to follow standardized recipes as well as improvise 6. Identification of food products 7. Must know knife cuts 8. Knowledge of various Preparation Methods 9. Excellent Knowledge of Line Position 10. Excellent knowledge of plate presentation 11. Highest standard of sanitation and hygiene 12. High standards of food quality 13. Awareness of waste control 14. Knows how to use all kitchen equipment and utensils 15. Proper product rotation procedures PERFORMANCE REQUIREMENTS: Knowledge, Skills & Abilities: Must have the ability to provide our guests with excellent customer service, have excellent communication skills and observation skills, and have an easygoing demeanor to ensure a fun and safe environment for our guests. Must have excellent knife skills. Responsible for maintaining kitchen sanitation as set by Washoe County Health Department Guidelines EDUCATION AND EXPERIENCE: Education: High School or Equivalent Experience: 5 years Certificate/License: Must have a permit to work in the United States. Washoe County Health Card. Certified Food Management Certificate TYPICAL WORKING CONDITIONS: Working environment will be hotter than the guest area of 82 degrees. Working with kitchen equipment where being safety conscious is required. Working in area where liquid and grease spills are most likely to occur TYPICAL PHYSICAL/MENTAL DEMANDS: (May be required in order to perform the essential functions of the position). Must be able to sort, write and count in English. Must be able to push/pull and lift/carry 50 pounds unassisted. Must be able to work overhead. Must be able to tolerate repetitious hand/arm/wrist movements. Must be able to sit, stand and walk. Must be able to grasp objects. Must be able to tolerate long periods of knife use. Must have the ability to shift back and forth between 2 or more activities in a timely manner and the ability to complete each. Must be able to tolerate cold to hot temperature fluctuations.
