Sanitation Manager, Dallas
Salad and Go ("S&G") is on a mission to disrupt the fast-food industry by making fresh, nutritious food affordable and available to all. We operate small drive-thru-only locations and serve an intentionally simplified and streamlined menu to enable operational efficiencies that allow the company to offer the lowest possible prices to guests-most notably $5.74 for salads and wraps with grilled chicken or organic tofu.
We cater to all day parts with $1 organic cold brew and five different breakfast burritos, made with real eggs, an all-natural tortilla and served with house-made salsa for $2.99. S&G has been lowering prices every year while raising team member wages ($15/hour in Arizona), which is unheard of in the restaurant industry.
S&G was founded in 2013 and currently operates 43 restaurants located in Phoenix, Arizona and Dallas, TX with 50 additional stores opening in the next 12 months, including several new markets. We are equipped to be the category leader in the healthy QSR vertical through our leading product (value and convenience), operations (small footprint and speed), and financials (industry leading AUVs and ROIs on new units).
We are also a "for good" company. This philosophy has informed our strategy of lowering prices for the consumer to increase accessibility, raising team member wages, and, most importantly, giving back to the community in a big way. Since April 2020, S&G has donated roughly 4,000 salads per week to non-profit organizations that fight hunger and homelessness. In the last 12 months, S&G has donated over 200,000 salads, and will donate even more in 2022 as we expand into new markets.
The Sanitation Manager has the following responsibilities:
Enforce the Company's Sanitation and Food Safety policies and procedures.
Directly supervise all the sanitation staff and ensure they are fully trained in carrying out their task and have full understanding of the food safety compliances. This includes managing the schedules of all the sanitation staff.
Develop and update the Sanitation Standard Operating Procedures (SSOPs).
Maintain and update the Master Sanitation Program.
Check and verify that every sanitation job is correctly carried out and completed. This will include signing off the SSOP forms at end of sanitation. (All completed SSOPs forms must be uploaded on the Sanitation file after weekly sanitation).
Train all Sanitation staff to correctly use of the sanitation chemicals Inc. concentration of the chemicals (All staff to be trained annually on chemical usage and sanitation).
Keep an inventory of all sanitation chemicals; utensils and PEPs and order them as necessary.
Carry out daily GMP inspection of the facility after the sanitation is completed and write out any work orders or corrective action observed during the inspection.
Maintain the wastewater system including ph. testing of the wastewater and reporting to Management of any non-conformances observed in the waste water system.
Manage the Chemical Control Program and works with EHS Manager and FSQA Manager on approval of new chemicals.
Manage the RPC cleaning process cycles.
Develop the labor model for equipment and process to determine the right head count for Equipment and Sanitation Process
Manage the Sanitation budget and industrial plant cleaning and production supply items. (Gloves, smocks, aprons, sleeves, aprons)
This position requires the Sanitation Manager work evenings and weekends as necessary to accomplish working around production schedules, could include holidays. Overtime or irregular hours may be necessary to meet sanitation demands of the business and schedules.
A four-year degree in Engineering or Science related background is preferred.
A minimum 5 years of Food Manufacturing Sanitation Management experience is required and a strong knowledge of industry's best practices for food safety, and sanitation.
Qualities of successful Sanitation Manager:
A strong knowledge of food safety regulations; good communication skills and able to manage and train staff to achieve the high sanitation standards in the facility.
Possess strong verbal/written communication skills and ability to influence at all levels
Ability to prioritize workload, is self motivated, self-directing
Hands-on, and comfortable working in a Food Manufacturing environment
Excellent problem solving skills with a "think out of the box" approach
Team player and excellent collaboration skills
English; Spanish would be helpful
