Executive Sous-Chef for Yountville, Ca RestaurantBISTRO JEANTY in Yountville California is seeking an organized and highly motivated individual to work with our culinary team in one of America's authentic French bistros.The qualified applicant will possess the following experience and knowledge:-Ordering and inventory control of all food products.-Control of all food and labor costs in a high volume restaurant.-Negotiating pricing on all products and overseeing vendor quality.-Maintaining food production quality within existing standards and establishing new standardsas needed.-Ability to collaborate with the Chef/Owner on new dishes while keeping within traditional French bistro food styles.-Ability to commit to a five year program for personal development, experience-Spanish language fluency is a plus-A culinary education and practical experience commensurate with the industry standard for this position.-Training new and seasoned staff in proper culinary techniques.-Developing loyal qualified BOH staff by creating a safe and rewarding environment.-Responsible for overall management of the facility with the collaboration of the General Manager.This Take Charge position reports directly to the chef/owner as needed.The qualified individual should have ten years of experience in French cuisine and in a management position.
