In this position, you will have a full potager garden at your disposal to create a wide variety of gourmet and nutrient-rich meals for our guests. Position Purpose

To manage and coordinate activities of the kitchen staff to ensure the highest quality of food is always prepared and served to the standard expected by senior management, within the budget set by the company.

Essential Functions

Maintain a consistent high level of food quality and guest service

  • -Maintain food, labor, and other expenses at budgeted levels
    -Maintain cleanliness of all back-of-house areas
    -Administer and maintain San Diego County Health District rules and regulations
    -Keep equipment in proper working order
    -Complete financial analyses and reports as assigned
    -Develop and maintain a positive work environment throughout the kitchen areas
    -Provide adequate training and tools for employees so that they may effectively perform their necessary job functions
    -Meet the attendance guidelines and adhere to regulatory, departmental, and company policies
    -Create new healthy and low-fat recipes
    -Maintain staffing levels based on occupancy
    -Substitute meals when necessary, such as allergies, etc.
    -Must get each item on the menu approved by the Health Program Director or Registered Dietitian
    -Must submit recipes in writing for nutritional analysis
    -Assure that all items served at both dietary and caloric standards
    -Interview, hire and terminate department employees
    -Ensure legal compliance and support of all labor and employment laws
    -Enforce all policies and procedures consistently and fairly
    -Counsel, guide and instruct personnel in the proper performance of their duties
    -Maintain thorough documentation of all relevant discussions
    -Prepare and coordinate performance reviews of assigned personnel
    -Ensure all health and safety regulations are complied with and report all accidents
