SUMMARY : This position is responsible for assisting in the creation of annual budgets managing and leading the culinary operation in all forecasting, and cost controls to meet or exceed operating financial potentials and goals. Assists the Executive Chef in managing departments to ensure requisitioning production, fabrication and quality. ESSENTIAL DUTIES AND RESPONSIBILITIES Supervises the food preparation staff, and is responsible for the hiring of new employees, termination of employees when necessary, and issuing disciplinary action as may be required. Responsible for scheduling direct reports. Ensure that room chefs, sous chefs, and cooks follow standardized recipes, portions plate garnishes and stocking of line in accordance to established procedures. Properly expedite, especially to assist room chefs, sous chefs, line cooks, when needed. Also is expected to assist in other areas of production when staff shortages occur. Oversees team member's schedules and evaluates employees in order to promote, train or recommend adjustments. Supervises all culinary operations. Inspects the methods of preparation and cooking and checks the sizes for portioning standards. Inspects the garnishing of all foods. Insures that all food preparation is economical and technically correct. Plans meals, develops menus. Requisitions food and equipment from respective purchasing agents, giving specifications, quantities, and quality prescriptions which must be maintained by the Purchasing Department. Initiate, promote and enforce safety procedures; primarily, cooking and holding processes of hot and cold foods. Safety handling of all equipment within the "Back of the House", (mixers, dicers, vegetable cutters, etc.). Observe and enforce sanitary behavior and clean appearance of food preparation. Schedules regular safety meetings with all cooks, pantries, kitchen workers and supervisory personnel. SUPERVISORY RESPONSIBILITIES Direct oversight of Sous Chef(s) and all kitchen personnel. Interview, select, train, supervise, counsel and discipline all employees in the department. Provide, develop, train, and maintain a professional work force. Ensure all services to members are conducted in a highly professional and efficient manner. Ensure a safe working environment and attitude on the part of all employees in areas of responsibility. EDUCATION and/or EXPERIENCE Five (5) or more years of progressive experience as a Room Chef or Sous Chef in a culinary operation with two or more kitchens and high volume full-service restaurants. Completion of Formal Culinary Training. Experience creating new menu items and new menus. Management/leadership experience required. Excellent verbal and interpersonal communication skills. Ability to work in a fast paced, high stress environment. Ability to adjust to and manage change effectively. Must be able to work flexible shifts. CERTIFICATES, LICENSES, REGISTRATIONS Obtain necessary food handling / health department work cards as defined by local jurisdiction.
